Field Notes

More rugged than nearby Old Bacolet, the natural amphitheatre of New Bacolet is a southerly-facing, steep-sided, sun-baked bowl with drought susceptible cane on weathered upper slopes and lush growth on the deeper, rich colluvial soils below – a textbook exploration of terroir. For this rum we harvested the sucrose-rich variety we call Lacalome Red from the “goat hill” field, which stands on the terroir known as Upper Combe.

New Bacolet is enclosed and sheltered by a forest at its north, and slopes down towards the south. Being based along a mountainside, steeper than most of our farms, the excavation of the land was the most difficult. Four terroirs were identified over 21 acres, and we have planted the varieties of Yellow Lady and Lacalome Red.

LACALOME RED

B80689 – has been christened Lacalome Red. ‘Lacalome’ after the area where we first started growing this variety. ‘Red’ for its reddish to brownish appearance, especially when the cane shoots are still young. High in yield and sucrose content, Lacalome Red is a prolific plant and a very sweet sugarcane variety. It possesses great drought tolerance and performs well under drier conditions especially on sloped and dry terrain.

The Sound of New Bacolet

 

Farmers from the surrounding area are on the farm collecting vines and bagasse from the sides of the fields, and loading it into their truck. Evening is peacefully settling over the farm – it’s not long until crickets will start their nightly concert.

General Climate
New Bacolet - Old Bacolet’s sister farm - brings a different topography completely, thus making its reaction to the climate alter. The farm is built into a mountain side, meaning that water retention decreases from the top of the farm to the bottom. Therefore, the top terroirs dry out more quickly in the dry season while the bottom fields remain bright and green from the runoff of rainwater. The Woodland terroir is the most cool and humid due to its sheltered corner of bamboo that shades the perimeter, though rainfall may be low, moisture retention remains high as the sunlight is not hitting the fields directly. Contrasting this, is terroir Dry Slope, where the dry slope and exposure to the sun lowers the moisture content of the soil ever slightly. As the dry season approaches the cane begins to brown but returns green as the rain falls again in during the rainy season. An interesting finding of the sloping terroirs of New Bacolet is the connection of a higher sugar content in the cane, when compared to Old Bacolet fields.

DEVON’S DESCRIPTION

Appearance: Clear, water-white colourless rum.

Nose: This pot still rum has a redolent floral aroma of lilac and dried flowers.

Palate: The flavor of the rum is characterized by tones of rich yet gentle vegetal notes of fresh grassiness and ends on a mellow earthy to floral bouquet ratio of undertones, complex, yet balanced with long dry finish.
