The largest of all our farms, Lake Antoine is situated on the north of the island. The fierce, ocean winds from the north-eastern coast flows off the Atlantic Ocean through the cane fields. Whilst coast surrounds the south side of the farm, the farm wraps its way around the renowned eponymous crater lake.
Woburn Clay Loam soil dominates the entirety of the farm. The ashy richness of the earth derives from the volcanic formulation and remnants of a once active volcano. At the time of harvesting, nine terroirs consumed 39.2 acres of farmland, with all six cane varieties taking up a field on the lands.
The grounds nearby have had a history of growing sugarcane: the small River Antoine distillery was for some considerable time since 1785 a large rum-making plantation. The nearby distillery still operates today on a small scale.
B69566 - The thick waxy coat bestows the internodes of this cane with a red to purple or bluish colour, hence the names ‘Blue Cane’ or ‘Purple Tallboy’. This slick variety has a tall and lean appearance. At a height of ten feet or more, Purple Tallboy towers over the others as the tallest variety in the field. It may also lodge a little and keeping the length of this variety manageable at harvest time is the key for getting it off the field without challenges.
High sloping terrain exposes the farm to strong, easterly winds from the Atlantic Ocean. Roaming cattle and sheep intermittently bleat nearby. The largest of the farms, gives way for an altering of sounds as you move from one undulating end of the farm to the next.

Palate: Sweet, fruity-apple, astrigent, bitter-sweet mouthfeel, warm finish.
