Field Notes

Ascending into the mountains of St. Andrew, on the island’s north-eastern coast, nestles Dunfermline – once a venerable distillery lost to Hurricane Ivan, where for centuries its clay loam has been conducive to cane cultivation. For this rum we harvested the sucrose-rich variety we call Lacalome Red from “Skean’s Field”, which stands on the terroir known as Mango lane.

Today four terroirs spread the 26.22 acres of farmland with four varieties of cane. But Dunfermline was acquired in 1953 by father and son Ferdinand Henry and Dennis Henry. At the time, the Estate was 992 acres of land with diverse crops, the main ones being Coconut, Cocoa, Bananas, Limes and Nutmeg for local sale and international export. In the 1970s and 1980s, the estate thrived, employing up to 150 people.

LACALOME RED

B80689 – has been christened Lacalome Red. ‘Lacalome’ after the area where we first started growing this variety. ‘Red’ for its reddish to brownish appearance, especially when the cane shoots are still young. High in yield and sucrose content, Lacalome Red is a prolific plant and a very sweet sugarcane variety. It possesses great drought tolerance and performs well under drier conditions especially on sloped and dry terrain.

The Sound of Dunfermline

 

The surrounding area of the farm is alive with sounds from the little neighbourhood across the road from the fields. People are passing and kids are playing in the street. Other farmers close-by are tending to their sheep and cows. Some of the fields have been harvested recently, and those patches remain very calm, quiet. In other areas there is the rustling of young fresh cane growing on the recently harvested fields, close to the road and the neighbourhood. At the back of the farm, on the slops and the hill itself, the mature cane stalks sway in the breeze.

General Climate
Dunfermline farm is quite unique in that it is surrounded by rainforests, yet it never seems to rain. Rainfall levels here tend to be lower, while sunlight exposure is high making the farm a drier one. However, the soil of the farm is very moisture retentive. The flat fields remain wet when rain water from the hills run down and remain within, keeping the loamy soil rather damp. A sign of this shows through the solidity of the soil, where there are no large cracks, even with the low rainfall. The temperature of the farm is cool, the farm open and the breeze airy. Dunfermline is a traditional cane growing area that has shown high yield with healthy harvests of green and vibrant cane.

DEVON’S DESCRIPTION

Appearance: Clear, water-white colourless rum.

Nose: This column still rum has a clean, light sweet aroma with tropical soft tones evocative of banana and pineapple.

Palate: This rum is sweet with a smooth velvety essence; has gentle hints of orange and soft marmalade, with medium finishing notes of candied sugar and buttery vanilla.
