On the east coast plain, five miles south of the distillery, there is a hidden valley floor between two small rivers, a fertile place where cane grows vigorously on lush, water-retentive soil derived from Woburn & Perseverance silts & clays. We hand-harvested the lanky variety we call Lodger from the Swimming Pool Field, which stands on the terroir known as Flood Plain.
Heavy breeze blows through the cane, creating a rhythmical sound. The large farms’ sounds alter from one end to the next. A weed eater hums loudly as a farmer cuts the grass at the north. Some cattle graze near the eastern tip of the farm bordering the beach, where playing children laugh and waves crash upon the shore.

Appearance: Transparent dark brown.
Nose: Oak, woody, butterscotch.
Palate: Spicy, Toffee, dried fruits, salty.
Finish: Smooth, thick – oily, linger with a slight burn.
